Protection. A normal compound or polish strips whatever was on the paint and leaves it bare, so you have to follow it with a wax, sealant or coating. An all in one carries the protection in the bottle, so when you wipe off the residue the panel is already sealed.
The only real downside is that it usually doesn't have the bite of something dedicated. It won't cut as hard as a cutting compound, but it can finish down to a really nice level, and for a lot of cars that's all you need. If the paint needs proper correction, do that first with an intermediate compound and use the all in one as the final step.

How much correction can an all in one actually do?
Light to moderate. Wash marks, light swirls, a bit of oxidation on an older car, all within reach, especially on softer paint or with a firmer pad. Deep scratches and heavy swirls are beyond it, and pushing an all in one harder to chase them usually just burns through the protective element and leaves you with an average polish.

Can I put a ceramic coating or wax over an all in one?
Depends which one. Products that leave a wax or polymer sealant behind, like Koch Chemie One Cut & Finish or Rupes UNO Protect, are meant to be the last step. A ceramic coating won't bond properly over them, so if you want to coat you'd wipe the panel down with a panel wipe first, which takes the protection off again and defeats the point.
The exception is a gloss primer like CARPRO Essence, which is built to sit under a coating. It corrects, fills and glosses, then the coating goes straight over the top. If a coating is the end goal, that's the type to look for.
