An interior detailing brush gets into the places a cloth can't, the air vents, switch gaps, seat seams, stitching and the join between the dash and the windscreen where dust settles and stays. The soft ones lift dust and work cleaner into textured plastics without scratching, the firmer ones agitate carpets and cloth seats, and the leather brushes have bristles gentle enough to clean grain without marking it. Most people start with a brush set that covers all three.

Will a detailing brush scratch my dashboard or trim?
Metal ferrules are the other thing to watch. The better brushes have a rubber or plastic collar so the metal never touches the trim, and it's worth checking before you buy a cheap one.
How do I clean the air vents and tight gaps?
Do the vents first in an interior clean. Whatever comes out of them lands on the seats and carpet, so it saves doing those twice.
